  • 2 cups grated carrots
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts (optional)
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In one bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In a separate bowl, beat butter with sugars until fluffy. Add eggs one at a time and stir in vanilla.
  4. Gradually mix dry ingredients into wet ingredients until just combined. Fold in grated carrots and optional nuts.
  5. Pour batter into prepared pan and bake for 30-35 minutes until a toothpick comes out clean.
  6. Let cool completely before frosting: beat cream cheese and butter until smooth; gradually add powdered sugar and vanilla.
  7. Spread frosting over cooled bars and cut into squares.
