  • 1 cup uncooked parboiled long-grain brown rice
  • 3 tablespoons fajita seasoning
  • 1 cup corn kernels (frozen)
  • 1 can low sodium black beans (drained and rinsed)
  • 5 cups shredded chicken
  • 3 cups reduced sodium chicken broth
  • 1 can mild green chilies
  • 1 tablespoon olive oil
  • 1 1/4 cups shredded Monterey Jack cheese

Instructions

  1. Preheat the oven to 400°F.
  2. In a baking dish, combine onion, bell pepper, rice, fajita seasoning; stir well.
  3. In a bowl, whisk together chicken broth, green chilies, tomato paste, olive oil; pour over rice mixture.
  4. Add chicken, black beans, corn; mix until combined.
