Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 pound ground beef
- 1–2 tablespoons chili powder, to taste
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 (28-ounce) can crushed tomatoes
- 1 (8-ounce) can tomato sauce
- 1 (14-ounce) can kidney beans, drained and rinsed
- 1 cup beef broth
- 8 ounces uncooked elbow macaroni
- 1 cup shredded cheddar cheese, divided
- 1 cup shredded mozzarella cheese, divided
Instructions
- Warm olive oil in a large pot over medium heat. Add diced onion and cook until soft; add garlic and bell pepper until fragrant.
- Brown the ground beef in the pot, breaking it up while cooking. Stir in chili powder, cumin, and smoked paprika.
- Mix in crushed tomatoes, tomato sauce, kidney beans, and beef broth; bring to a boil. Add macaroni and simmer for about 10–12 minutes until al dente.
- Remove from heat; stir in half of each cheese until melted. Top with remaining cheese and let sit covered for two minutes until melted.
