  • 1 lb ground beef
  • ½ cup minced onion
  • 2 tablespoons minced garlic
  • 28 oz crushed tomatoes
  • 4 cups low sodium beef broth
  • 2 cups reginetti pasta (or broken lasagna noodles)
  • Optional: ricotta and Parmesan cheese for serving

Instructions

  1. Heat olive oil in a large pot over medium-high heat for about 3 minutes. Add ground beef and cook until browned (about 10 minutes).
  2. Stir in minced onion and garlic; sauté until onions are translucent (2–3 minutes).
  3. Add crushed tomatoes, bay leaf, dried herbs, black pepper, broth, and water. Mix well.
  4. Bring to a boil; add raw pasta. Reduce heat and simmer uncovered until the pasta is slightly undercooked.
  5. Remove from heat; let sit uncovered for 5 minutes before serving.
  6. Discard bay leaf and ladle into bowls, topping with optional cheese.
