Ingredients
- 1 tablespoon olive oil
- 1 lb ground beef
- ½ cup minced onion
- 2 tablespoons minced garlic
- 28 oz crushed tomatoes
- 4 cups low sodium beef broth
- 2 cups reginetti pasta (or broken lasagna noodles)
- Optional: ricotta and Parmesan cheese for serving
Instructions
- Heat olive oil in a large pot over medium-high heat for about 3 minutes. Add ground beef and cook until browned (about 10 minutes).
- Stir in minced onion and garlic; sauté until onions are translucent (2–3 minutes).
- Add crushed tomatoes, bay leaf, dried herbs, black pepper, broth, and water. Mix well.
- Bring to a boil; add raw pasta. Reduce heat and simmer uncovered until the pasta is slightly undercooked.
- Remove from heat; let sit uncovered for 5 minutes before serving.
- Discard bay leaf and ladle into bowls, topping with optional cheese.
