  • 1 medium onion, diced
  • 1 small red bell pepper, diced
  • 1 small yellow bell pepper, diced
  • 2 large garlic cloves, chopped
  • 2 tablespoons smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 2 tablespoons tomato paste
  • 1 ½ cups long grain rice
  • 3 ½ cups chicken stock
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large deep pan or Dutch oven over medium heat. Add chicken and cook until lightly golden brown (5–6 minutes).
  2. Stir in diced onion and bell peppers; cook for another 5 minutes until softened.
  3. Add garlic and cook for an additional minute. Mix in smoked paprika, oregano, thyme, and tomato paste.
  4. Pour in long grain rice and chicken stock; stir well. Bring to a boil.
  5. Reduce heat to low, cover with a lid, and simmer for about 20 minutes until rice is tender.
  6. Stir in fresh parsley; season with salt and pepper before serving.
