Ingredients
- 1 lb boneless skinless chicken thighs
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 1/2 cup brown sugar
- 1 tablespoon cornstarch
- 1/3 cup water
- 2 teaspoons sesame oil
- 1/2 tablespoon sesame seeds
- 1/2 cup cornstarch
- 1/2 cup flour
- 2 egg whites
- 1/2 cup cold seltzer water
- Vegetable oil for frying
- 2 teaspoons sesame oil
- 1/4 teaspoon crushed red pepper
- 1 tablespoon minced garlic
Instructions
- In a bowl, whisk together the soy sauce, rice vinegar, brown sugar, cornstarch, water, sesame oil, and sesame seeds; set aside.
- In another bowl, combine cornstarch, flour, egg whites, and cold seltzer water until just mixed. Coat the chicken pieces in this batter.
- Heat vegetable oil in a pot to 350°F (175°C). Fry the battered chicken in batches until golden brown; drain on paper towels.
- In a wok or skillet, heat sesame oil and sauté minced garlic with crushed red pepper for about 30 seconds.
