  • 1 lb boneless skinless chicken thighs
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1/2 cup brown sugar
  • 1 tablespoon cornstarch
  • 1/3 cup water
  • 2 teaspoons sesame oil
  • 1/2 tablespoon sesame seeds
  • 1/2 cup cornstarch
  • 1/2 cup flour
  • 2 egg whites
  • 1/2 cup cold seltzer water
  • Vegetable oil for frying
  • 2 teaspoons sesame oil
  • 1/4 teaspoon crushed red pepper
  • 1 tablespoon minced garlic

Instructions

  1. In a bowl, whisk together the soy sauce, rice vinegar, brown sugar, cornstarch, water, sesame oil, and sesame seeds; set aside.
  2. In another bowl, combine cornstarch, flour, egg whites, and cold seltzer water until just mixed. Coat the chicken pieces in this batter.
  3. Heat vegetable oil in a pot to 350°F (175°C). Fry the battered chicken in batches until golden brown; drain on paper towels.
  4. In a wok or skillet, heat sesame oil and sauté minced garlic with crushed red pepper for about 30 seconds.
  5. Add the fried chicken and prepared sauce to the wok; toss everything together until well coated.
  6. Serve hot with extra sesame seeds if desired.
