- 3 tablespoons butter (divided)
- 2 slices bread
- 1 slice cheddar cheese
- 2 slices deli ham
Instructions
- In a medium bowl, whisk together the eggs, salt, and pepper until combined.
- Melt 2 tablespoons of butter in a non-stick skillet over medium heat. Pour in the egg mixture and swirl to cover the pan.
- Butter one side of each slice of bread with the remaining tablespoon of butter and place them on top of the eggs, butter side up.
- Cook undisturbed for about 5-7 minutes or until the eggs are set.
- Carefully flip the sandwich over, top with cheese and ham, fold any excess egg over the ham, and place the other slice on top.
