  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 800g (4 cups) boiled and cooled long-grain rice
  • 1/2 tablespoon sesame oil
  • 2 eggs
  • 2 tablespoons dark soy sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic salt
  • 1 tablespoon lemon juice
  • 1/2 bunch spring onions, chopped

Instructions

  1. Heat 1 tablespoon of vegetable oil in a wok over medium heat. Add diced onion and cook until soft, about 5 minutes.
  2. Stir in minced garlic and cook for another 30 seconds.
  3. Increase heat to high and add boiled rice along with sesame oil; toss well to combine.
  4. Push rice to one side of the pan. Crack eggs into the empty space and drizzle with a bit of soy sauce; scramble until just set.
  5. Mix scrambled eggs into the rice, then add remaining soy sauce, salt, garlic salt, and lemon juice. Stir thoroughly.
  6. Serve hot topped with chopped spring onions alongside your favorite dishes.
