  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter (softened)
  • 3/4 cup brown sugar
  • 1/3 cup white sugar
  • 1 1/2 cups smooth peanut butter
  • 1 large egg
  • 1 large egg yolk (in addition to the other egg, discard the white)
  • 7 oz jar marshmallow fluff

Instructions

  1. Preheat oven to 350F and line a 9×13 inch baking pan with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream softened butter with brown sugar and white sugar until light.
  4. Mix in peanut butter and eggs until smooth.
  5. Gradually combine dry ingredients into the wet mixture.
  6. Reserve 1 cup of dough and press the remaining into the bottom of the prepared pan.
  7. Bake for 25 minutes; spread marshmallow fluff over baked layer.
  8. Pinch off pieces from reserved dough to top the marshmallow layer.
  9. Bake for an additional 10 minutes; let cool before slicing.
