Ingredients

  • 1 tablespoon cornstarch
  • ¼ teaspoon cream of tartar
  • ½ cup fresh blueberries

Instructions

  1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Blend cottage cheese until smooth.
  3. In a separate bowl, beat egg whites with cream of tartar until stiff peaks form.
  4. In another bowl, mix egg yolks, blended cottage cheese, cornstarch, and optional ingredients until combined.
  5. Gently fold the yolk mixture into the egg whites and then fold in blueberries.
  6. Scoop batter onto the baking sheet, spacing them 2 inches apart.
  7. Bake for 25-30 minutes until golden brown.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack.
