  • 2 large yellow onions, thinly sliced
  • 3 garlic cloves, minced
  • 1 ½ cups orzo pasta
  • 2 cups cooked shredded chicken
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese

Instructions

  1. In a large oven-safe skillet, melt butter and olive oil over medium heat. Add sliced onions, sugar, and salt. Cook for 20–25 minutes until golden brown; add garlic in the last minute.
  2. Stir in orzo pasta and toast for about 2 minutes. Add shredded chicken, thyme, black pepper, and Worcestershire sauce (optional).
  3. Pour in chicken broth and heavy cream. Simmer gently on low heat for about 8–10 minutes until orzo is tender.
  4. Stir in mozzarella cheese and Parmesan until melted into a creamy sauce.
  5. Preheat oven to 375°F (190°C). Sprinkle remaining mozzarella on top and bake uncovered for 10–15 minutes until bubbly and golden.
  6. Let rest for 5–10 minutes before serving.
