  • 4 Chicken Thighs
  • 2 cups Self-Rising Flour
  • 1 cup Buttermilk
  • 4 slices Brioche Bread
  • 4 large Eggs
  • 1 cup apricot preserves
  • 1 tbsp chili sauce
  • 1/4 cup honey
  • 1/2 cup bourbon
  • Dash sriracha
  • 3 tbsp unsalted butter (for frying)
  • 1/2 cup milk
  • 1 tsp almond extract (or vanilla)
  • 1 tsp cinnamon
  • Pinch nutmeg
  • Pinch salt
  • 1 tbsp onion powder
  • 1 tbsp garlic
  • 1 tbsp paprika
  • 1/2 tbsp Tony’s seasoning
  • 1/2 tsp white pepper
  • 1/2 tsp salt
  • 2 eggs (add in after marinated when ready to fry)

Instructions

  1. Clean and marinate chicken thighs in buttermilk for 30 minutes to 2 hours.
  2. Heat oil in a Dutch oven to 350°F.
  3. Dredge marinated chicken in seasoned flour and fry until golden brown (7 minutes per side).
  4. Prepare bourbon sweet chili sauce by combining ingredients in a small pot; simmer until thickened.
  5. Make the French toast by whisking eggs, milk, almond extract, cinnamon, and frying brioche slices in butter until golden.
  6. Assemble the sandwich with fried chicken and drizzle with sauce.
