  • 1 1/4 cups granulated sugar
  • 1 tablespoon instant coffee granules
  • 3 tablespoons light olive oil
  • 1 tablespoon vanilla extract
  • 2/3 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan and line it with parchment paper.
  2. In a medium saucepan over low heat, melt together the butter and 2 cups of chocolate chips until smooth. Remove from heat and let cool.
  3. In a large mixing bowl, whisk together the eggs, sugar, coffee granules, oil, and vanilla until well combined.
  4. Stir the cooled chocolate mixture into the egg mixture until smooth.
  5. In another bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually fold this dry mixture into your batter using a spatula until just combined.
  6. Pour the batter into your prepared pan and sprinkle with remaining chocolate chips. Bake for about 35–40 minutes based on your preferred fudginess.
