  • 225g dark chocolate
  • 56g butter
  • 2 eggs
  • 100g caster sugar
  • 90g Demerara sugar
  • 1 teaspoon vanilla
  • 85g chocolate chips

Instructions

  1. Preheat your oven to 160ºC (320ºF) with a fan or 170ºC (338ºF) for conventional. Line a baking tray with parchment paper.
  2. Melt the dark chocolate and butter together in a heatproof bowl over simmering water. Stir in vanilla extract once melted.
  3. In another bowl, whisk eggs with caster and Demerara sugars until light and fluffy.
  4. Sift together flour, cocoa powder, baking powder, and salt; stir in chocolate chips.
  5. Gently fold the melted chocolate mixture into the egg mixture.
  6. Incorporate the dry ingredients without overmixing.
  7. Scoop tablespoon-sized mounds onto the prepared tray, leaving space between each.
  8. Bake for 12-14 minutes until crackly on top. Allow to cool before serving.
