  • 450 grams ground chicken
  • 60 grams grated Parmesan cheese
  • 60 grams breadcrumbs
  • 15 grams fresh parsley, finely chopped
  • 3 garlic cloves, minced
  • 1 large egg, beaten
  • 60 millilitres whole milk
  • 1 teaspoon dried oregano
  • 0.5 teaspoon fine sea salt
  • 0.25 teaspoon freshly ground black pepper
  • 2 tablespoons extra virgin olive oil
  • 25 grams grated mozzarella cheese (optional)

Instructions

  1. Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine ground chicken, Parmesan cheese, breadcrumbs, parsley, minced garlic, beaten egg, oregano, salt, and black pepper. Mix until well combined.
  3. Add whole milk and gently mix until the texture is smooth.
  4. Shape the mixture into four mini loaves and place them on the baking sheet with space between each loaf.
  5. Drizzle with olive oil and optionally sprinkle mozzarella cheese on top. Bake for 25–30 minutes until golden brown and the internal temperature reaches 74°C (165°F).
  6. Allow to rest for about 5 minutes before serving.
