  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cups cooked rice or quinoa
  • 2 cups halved grape or cherry tomatoes
  • 2 cups diced cucumber
  • 4 cups shredded romaine lettuce
  • 1 cup sliced red onion
  • 1/2 cup feta cheese
  • For the tzatziki: 1 cup Greek yogurt
  • 1/2 cup grated cucumber
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • 1/4 teaspoon salt (or to taste)
  • 1 tablespoon fresh chopped dill

Instructions

  1. In a mixing bowl, whisk together olive oil, lemon juice, honey, garlic powder, oregano, basil, salt, pepper, and red pepper flakes to create the marinade.
  2. Pound chicken breasts to even thickness and marinate for at least 30 minutes.
  3. Prepare tzatziki by mixing Greek yogurt with grated cucumber, minced garlic, lemon juice, olive oil, salt, and dill; refrigerate until ready.
  4. Cook rice or quinoa as per package instructions; chop veggies.
  5. Air fry or pan-cook marinated chicken until fully cooked (internal temp of 165°F), then let it rest before slicing.
  6. In bowls, layer rice/quinoa with sliced chicken and fresh veggies; drizzle with tzatziki sauce.
