  • 1 lb ground chicken
  • ⅓ cup almond flour
  • ¼ cup fresh parsley
  • 2 tsp fresh dill
  • 3 cloves garlic
  • ¼ cup feta cheese
  • 1 cup orzo pasta
  • Juice of 1 lemon
  • 2 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, combine ground chicken, almond flour, parsley, dill, garlic, feta cheese, onion powder, oregano, cumin, salt, pepper, and lemon zest. Mix until just combined.
  2. Form the mixture into meatballs (1½ to 2 inches) and lightly salt them.
  3. Heat olive oil in a skillet over medium heat and sear meatballs for 3–4 minutes until browned on all sides. Cover and cook an additional 5–6 minutes until cooked through.
  4. In the same skillet, bring chicken broth to a boil and add orzo. Cook for 8–10 minutes until tender.
  5. Stir in lemon juice and olive oil into the cooked orzo. Serve the orzo topped with meatballs and sprinkle with crumbled feta cheese.
