Ingredients
- 1 lb ground chicken
- ⅓ cup almond flour
- ¼ cup fresh parsley
- 2 tsp fresh dill
- 3 cloves garlic
- ¼ cup feta cheese
- 1 cup orzo pasta
- Juice of 1 lemon
- 2 cups chicken broth
- Salt and pepper to taste
Instructions
- In a mixing bowl, combine ground chicken, almond flour, parsley, dill, garlic, feta cheese, onion powder, oregano, cumin, salt, pepper, and lemon zest. Mix until just combined.

- Heat olive oil in a skillet over medium heat and sear meatballs for 3–4 minutes until browned on all sides. Cover and cook an additional 5–6 minutes until cooked through.
- In the same skillet, bring chicken broth to a boil and add orzo. Cook for 8–10 minutes until tender.
- Stir in lemon juice and olive oil into the cooked orzo. Serve the orzo topped with meatballs and sprinkle with crumbled feta cheese.
