  • 2 ears sweet corn
  • 1 medium avocado
  • ½ cup salsa
  • ½ cup sour cream
  • Fresh cilantro
  • Juice of ½ medium lime
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon oregano

Instructions

  1. Rinse the rice under cold water until clear; cook according to package instructions. Fluff with a fork and mix in lime juice and chopped cilantro.
