Ingredients
- 24 oz salmon (cut into 4 portions)
- 1 cup 2% milk
- 1 tbsp cornstarch
- 2 tbsp butter
- 1 tsp olive oil
- 2 cloves garlic (minced)
- 2 cups fresh spinach (chopped)
- 1 cup cherry tomatoes (halved)
- 1/4 cup sun-dried tomatoes
- 1/2 cup fresh grated parmesan cheese
- Salt and black pepper to taste
- 1 serving Barilla protein pasta
Instructions
- Preheat a nonstick pan over medium heat.
- Cut salmon into four portions and season with salt and pepper.
- In the hot pan, add olive oil and butter. Cook salmon skin-side down for about 4-5 minutes on each side until golden brown.
- Remove salmon from the pan and set aside. In a mixing bowl, whisk together milk and cornstarch until smooth.
- Add minced garlic to the same pan, then gradually stir in the milk mixture until thickened.
- Stir in chopped spinach, cherry tomatoes, and sun-dried tomatoes; cook until spinach wilts (about 3 minutes).
- Toss cooked pasta into the sauce until well-coated. Flake salmon over the top before serving.
