  • 4 cups low-sodium chicken or vegetable broth
  • 2 cups whole milk (or half-and-half)
  • 1/2 cup heavy cream (optional)
  • 2 cups sharp cheddar cheese
  • Fresh herbs: parsley, chives, thyme
  • Salt and pepper to taste

Instructions

  1. Peel and cube the Yukon Gold potatoes. Rinse under cold water to remove starch.
  2. In a large pot over medium heat, melt butter. Sauté chopped onion for 5–7 minutes until translucent.
  3. Add minced garlic and cook until fragrant.
  4. Sprinkle flour over the mixture and stir continuously for about 1–2 minutes.
  5. Gradually whisk in broth, scraping flavorful bits from the pot until smooth; bring to a simmer.
  6. Add potato cubes and cover; simmer for 15–20 minutes until tender.
  7. Blend half of the soup until smooth; return it to the pot.
  8. Reduce heat; stir in milk and heavy cream if using.
  9. Add fresh herbs and allow to heat gently for five minutes.
  10. Off the heat, stir in shredded cheddar cheese until melted.
