Ingredients
- 2 boneless skinless chicken breasts
- 8 cups chicken broth
- 4 celery stalks, chopped
- 4 whole carrots, peeled and chopped

- 2 cups egg noodles

Instructions
- In a large stock pot or dutch oven, combine chicken breasts, chicken broth, celery, carrots, and onions.
- Bring to a boil; then reduce heat to low and cover. Cook the chicken until it reaches an internal temperature of 165°F (about 20–30 minutes).
- Remove chicken, shred it with forks, and return it to the pot.
- Stir in thyme leaves, garlic, salt, pepper, bay leaves, egg noodles, and water.
- Cook over medium-high heat for about 10 minutes until noodles are tender.
