Ingredients

  • 12 ounces milk chocolate
  • 2 tablespoons coconut oil
  • 1 cup marshmallow fluff
  • 1/3 cup unsweetened flaked coconut
  • 2 large egg whites
  • 1/4 teaspoon cream of tartar
  • 2/3 cup light corn syrup
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1/2 teaspoon vanilla extract
  • pinch of salt

Instructions

  1. Line a muffin tin with liners. Chop coconut into smaller pieces.
  2. Melt chocolate and coconut oil together until smooth. Spoon into liners, spreading up the sides.
  3. Chill for about 20 minutes until firm, then add marshmallow fluff and sprinkle with remaining coconut.
  4. Top with more melted chocolate, smooth out, and chill again for another 20 minutes before serving.
