- 1/2 cup (120ml) heavy cream
- 3 tablespoons (44ml) water
- 1/4 cup (60ml) light corn syrup
- 1 cup (200g) sugar
- 1/2 teaspoon flaked sea salt
Instructions
- Prepare a 9×5-inch loaf pan by lightly oiling it and lining it with parchment paper.
- In a microwave-safe bowl, combine butter and heavy cream; heat until melted.
- In a saucepan, mix water and corn syrup; gradually add sugar, stirring gently.
- Bring to a boil, cover for 1 minute, then monitor temperature to reach 320°F (160°C).
- Gradually incorporate the butter mixture into the boiling sugar while stirring cautiously.
- Continue cooking until the mixture reaches 240°F (115°C).
- Pour into the prepared pan and cool for about 20 minutes before sprinkling with sea salt.
- Allow to cool completely for about 3½ hours before unmolding and cutting into pieces.
