  • 1/2 cup (120ml) heavy cream
  • 3 tablespoons (44ml) water
  • 1/4 cup (60ml) light corn syrup
  • 1 cup (200g) sugar
  • 1/2 teaspoon flaked sea salt

Instructions

  1. Prepare a 9×5-inch loaf pan by lightly oiling it and lining it with parchment paper.
  2. In a microwave-safe bowl, combine butter and heavy cream; heat until melted.
  3. In a saucepan, mix water and corn syrup; gradually add sugar, stirring gently.
  4. Bring to a boil, cover for 1 minute, then monitor temperature to reach 320°F (160°C).
  5. Gradually incorporate the butter mixture into the boiling sugar while stirring cautiously.
  6. Continue cooking until the mixture reaches 240°F (115°C).
  7. Pour into the prepared pan and cool for about 20 minutes before sprinkling with sea salt.
  8. Allow to cool completely for about 3½ hours before unmolding and cutting into pieces.
