  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (frozen or fresh)
  • Chopped green onions or parsley for garnish

Instructions

  1. Heat a large skillet over medium heat.
  2. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Add oil to the pan and sear the chicken for 3–4 minutes on each side until golden brown. Set aside.
  4. In the same pan, toast the uncooked rice for 1–2 minutes while stirring.
  5. Pour in chicken broth, BBQ sauce, and honey; stir to combine.
  6. Return the seared chicken to the pan.
  7. Bring to a gentle boil, reduce heat to low, cover, and simmer for 15 minutes.
  8. Add mixed vegetables on top; cover and cook for another 5 minutes until rice is tender.
  9. Let sit for 5 minutes before fluffing the rice with a fork.
  10. Garnish with green onions or parsley and serve hot.
