  • 2 1/4 cups powdered sugar
  • 1 tablespoon instant coffee granules
  • 2 teaspoons hot water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine vegetable oil, buttermilk, beaten eggs, and vanilla extract.
  3. In another bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture while mixing on low speed until just combined; then stir in hot coffee until smooth.
  5. Grease two 9-inch round cake pans and divide the batter evenly between them.
  6. Bake for about 38 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes before transferring to wire racks.
  7. For the frosting, melt semi-sweet chocolate and beat with butter until creamy; then mix in egg yolk, vanilla extract, powdered sugar, and dissolved coffee granules until fluffy.
  8. Assemble by placing one layer on a serving plate; frost generously with icing before adding the second layer and frosting the entire cake.
