  • 2 containers (15 oz each) ricotta cheese
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs (room temperature)
  • 1 box (15.25 oz) chocolate cake mix
  • ½ cup canola or vegetable oil
  • 1 cup water
  • 3 large eggs (for pudding)
  • 1 box (5 oz) instant chocolate pudding
  • 3 cups cold milk
  • 1 container (8 oz) whipped topping, thawed

Instructions

  1. Preheat the oven to 350°F and grease a 9×13 baking dish.
  2. In a mixing bowl, blend ricotta cheese, sugar, vanilla extract, and room temperature eggs until smooth.
  3. In another bowl, combine chocolate cake mix, oil, and water; mix until blended.
  4. Pour half of the chocolate batter into the prepared baking dish, followed by half of the ricotta mixture. Repeat with remaining batter and ricotta.
  5. Bake for approximately 70 minutes or until a toothpick inserted comes out clean.
  6. For the topping, whisk together eggs and instant pudding mix; gradually add cold milk until thickened.
  7. Once cooled, spread the pudding mixture on top and finish with whipped topping. Chill before serving.
