  • 2 cups roughly chopped cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon sea salt
  • 2 tablespoons freshly squeezed lime juice
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • 4 boneless, skinless chicken breasts (1.52 pounds)

Instructions

  1. In a food processor, combine jalapeno, cilantro, cumin, sea salt, lime juice, garlic, and olive oil. Blend until smooth.
  2. Set aside 1/4 cup of the marinade in the refrigerator.
  3. Pour the remaining marinade over chicken breasts in a mixing bowl and toss to coat.
  4. Cover and refrigerate the chicken for at least 1 hour to marinate.
  5. Preheat your grill to medium heat (350ºF – 400ºF).
  6. Remove chicken from the refrigerator and place on the grill.
  7. Grill each side for about 8 minutes or until cooked through (internal temperature should reach 165ºF).
  8. Brush with reserved marinade before serving.
