  • 4 large baking potatoes
  • 9 oz cooked & chopped bacon
  • 5.3 oz grated cheddar cheese
  • 5.3 oz cream cheese
  • 3 fresh jalapeños, deseeded & diced
  • 2 tbsp butter
  • Garlic powder, salt & black pepper to taste

Instructions

  1. Preheat your oven to 356°F (180°C). Prick the potatoes with a fork, coat with olive oil, and season with salt before baking for 60-70 minutes until tender.
  2. Once cooled, slice the tops off each potato and scoop out the insides.
  3. In a bowl, mix the scooped potato with cream cheese, butter, garlic powder, salt, pepper, cheddar cheese, and bacon.
  4. Fill each potato skin with the mixture and top with additional cheese and jalapeños.
  5. Bake again at 430°F (220°C) for about 15 minutes until golden brown.
