Ingredients
- 2 lb thin-sliced beef (or chicken, tofu, or shrimp)
- 1 lb Korean sweet potato noodles (glass noodles)
- 3 medium carrots (julienned)
- 1 large white onion (thinly sliced)
- 1/2 bunch green onions (chopped)
- 6 garlic cloves (minced)
- 1/2 lb spinach leaves
- 4 tablespoons sesame oil
- 1 tablespoon olive oil
- 6 tablespoons soy sauce
- 3 tablespoons brown sugar
Instructions
- Cook the sweet potato noodles in boiling water with olive oil for 5–6 minutes until tender. Drain and set aside.
- In a skillet over high heat, brown the beef; season with half of the soy sauce, sesame oil, and brown sugar. Set aside when cooked through.
- Sauté carrots and onion in another skillet over medium heat until softened.
- Add remaining soy sauce, sesame oil, brown sugar, minced garlic, and green onions to the vegetable skillet; cook for an additional minute.
- Stir in spinach until wilted.
- In a mixing bowl, combine noodles, beef mixture, and sautéed vegetables; toss well to coat evenly.
- Serve warm garnished with extra chopped green onions.
