  • 8 oz unsalted butter (1 cup), melted
  • 8 large eggs
  • 1 ¼ cups fresh lemon juice
  • 19.25 oz lavender sugar (2 ¾ cups)
  • Zest of 2 lemons (about 2 TBSP)
  • 9 oz all-purpose flour (2 cups)
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 2.25 oz all-purpose flour (1/2 cup)
  • Powdered sugar (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine granulated sugar and culinary dried lavender, then mix in melted butter, vanilla extract, salt, and flour until crumbly.
  3. Press the mixture into a greased 9×13 inch baking pan and bake for about 20 minutes until golden brown.
  4. Meanwhile, whisk together eggs in another bowl. Gradually add fresh lemon juice and lavender sugar while whisking continuously. Stir in lemon zest and flour until just combined.
  5. Once the crust is baked, pour the filling over it and bake for an additional 40 minutes or until set.
  6. Cool completely before slicing into squares; dust with powdered sugar before serving.
