  • 1 pound uncooked potato gnocchi
  • 2 cloves garlic (minced)
  • 1 cup heavy cream
  • 1/2 cup chicken broth

  • 1/2 cup freshly grated parmesan cheese
  • Fresh baby spinach (2 cups)

Instructions

  1. Cut chicken breasts in half lengthwise to create thinner cutlets. Season both sides with garlic powder, lemon pepper seasoning, salt, and pepper.
  2. Heat olive oil and butter in a skillet over medium-high heat. Cook the chicken for about 5-6 minutes on each side until golden brown and fully cooked. Remove from skillet and keep warm.
  3. In the same skillet, lower the heat to medium and add minced garlic; sauté until fragrant (about 30 seconds). Stir in chicken broth and lemon juice, scraping up any brown bits from the bottom of the pan.
  4. Pour in heavy cream and add uncooked gnocchi; stir well to coat them in the sauce. Allow to bubble gently uncovered for about 5-7 minutes, stirring occasionally until gnocchi is cooked through.
  5. Stir in fresh spinach until wilted, then add parmesan cheese. Return cooked chicken to skillet, spooning sauce over it before serving.
