  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup freshly squeezed lemon juice
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1/2 teaspoon salt
  • 2 tablespoons lemon zest
  • 2 tablespoons cornstarch
  • 1/2 cup melted butter
  • 1/4 cup brown sugar for crumble
  • 1/4 cup flour for crumble

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together softened butter and brown sugar. Mix in oats, flour, and salt until crumbly; press into the bottom of a baking dish.
  3. In another bowl, whisk together lemon juice, zest, and sugar. Add eggs one by one while mixing well; stir in cornstarch until smooth.
  4. Pour the lemon filling over the crust and sprinkle crumble topping made from melted butter, oats, brown sugar, and flour.
  5. Bake for about 38 minutes or until golden brown; let cool completely before cutting into squares.
