- 2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup freshly squeezed lemon juice

- 1 cup granulated sugar
- 1 cup brown sugar

- 2 tablespoons lemon zest
- 2 tablespoons cornstarch
- 1/2 cup melted butter
- 1/4 cup brown sugar for crumble
- 1/4 cup flour for crumble
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, cream together softened butter and brown sugar. Mix in oats, flour, and salt until crumbly; press into the bottom of a baking dish.
- In another bowl, whisk together lemon juice, zest, and sugar. Add eggs one by one while mixing well; stir in cornstarch until smooth.
- Pour the lemon filling over the crust and sprinkle crumble topping made from melted butter, oats, brown sugar, and flour.
- Bake for about 38 minutes or until golden brown; let cool completely before cutting into squares.
