- 2 cups raspberries (fresh or frozen)
- 2 1/4 cups all-purpose flour
- 1/2 cup granulated sugar (shortbread base)
- 1 cup unsalted butter (melted)
- 1 1/2 cups granulated sugar (for filling)
- 6 large eggs
- 3/4 cup fresh lemon juice
Instructions
- Preheat oven to 325°F (160°C). Line a 9×13 inch baking pan with parchment paper.
- For the shortbread base, whisk together flour, sugar, and salt; mix in melted butter until combined. Press into the bottom of the prepared pan and bake for 20-25 minutes until set and slightly golden.
- To make the raspberry puree, blend raspberries until smooth, strain to remove seeds, then simmer until thickened.
- In a bowl, whisk together sugar and cornstarch; add eggs one at a time, mixing in cooled raspberry puree and lemon juice. Pour over baked crust.
- Bake for another 20-25 minutes until set. Cool completely before refrigerating for at least two hours before cutting.
