  • 1 cup dried red kidney beans (soaked overnight)
  • 4 vegan sausages (sliced)
  • 1 medium onion (diced)
  • 2 stalks celery (diced)
  • 1 medium green bell pepper (diced)
  • 5 cups vegetable stock
  • 2 tablespoons Cajun seasoning
  • 1 cup long white grain rice

Instructions

  1. Heat oil in a large pot over medium heat. Add vegan sausage slices and cook until browned.
  2. Add the diced onion, celery, and bell pepper; sauté until onions are translucent.
  3. Stir in Cajun seasoning, vegetable stock, bay leaves, thyme, and garlic.
  4. Drain the soaked kidney beans and add to the pot, season with black pepper and optional vinegar.
  5. Cover and simmer on medium heat for 1 to 1½ hours or until beans are soft, adding water if needed.
  6. Cook rice according to package instructions while the stew simmers.
  7. Mash some beans against the side of the pot to thicken; simmer for an additional 5 minutes.
  8. Remove bay leaves before serving hot alongside rice.
