  • 6 boneless, skinless chicken breasts
  • 5 slices of bacon, diced
  • 1/4 cup jalapeno slices, diced
  • 1/4 cup diced onion
  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 2 oz bag of crushed pork skins
  • 4 tablespoons butter, melted

Instructions

  1. Preheat oven to 425°F.
  2. Season chicken breasts with salt and pepper and place in a casserole dish. Bake for 30-40 minutes until juices run clear.
  3. In a frying pan, cook diced bacon until crispy. Remove and sauté onions in the same pan until tender.
  4. In a bowl, mix cooked bacon, onions, jalapenos, cream cheese, mayonnaise, cheddar cheese, and half of the Parmesan.
  5. Spread mixture over baked chicken and lower oven temperature to 350°F. Bake for an additional 15 minutes.
  6. Combine crushed pork skins with remaining Parmesan and melted butter; sprinkle on top of chicken.
  7. Broil for a few minutes until topping is golden brown.
