Ingredients
- 6 boneless, skinless chicken breasts
- 5 slices of bacon, diced
- 1/4 cup jalapeno slices, diced
- 1/4 cup diced onion
- 1 (8 oz) package cream cheese, softened
- 1/2 cup mayonnaise
- 1 cup shredded cheddar cheese
- 2 oz bag of crushed pork skins
- 4 tablespoons butter, melted
Instructions
- Preheat oven to 425°F.
- Season chicken breasts with salt and pepper and place in a casserole dish. Bake for 30-40 minutes until juices run clear.
- In a frying pan, cook diced bacon until crispy. Remove and sauté onions in the same pan until tender.
- In a bowl, mix cooked bacon, onions, jalapenos, cream cheese, mayonnaise, cheddar cheese, and half of the Parmesan.
- Spread mixture over baked chicken and lower oven temperature to 350°F. Bake for an additional 15 minutes.
- Combine crushed pork skins with remaining Parmesan and melted butter; sprinkle on top of chicken.
- Broil for a few minutes until topping is golden brown.
