  • 9 whole lasagna noodles
  • 2 cups shredded cooked chicken breast
  • 8 slices cooked bacon, crumbled
  • 3 tablespoons butter
  • 3 large garlic cloves, minced
  • 1½ cups milk
  • 1½ cups heavy whipping cream
  • 1 cup grated Parmesan cheese
  • 2 cups chopped fresh spinach
  • 2 cups skim ricotta cheese
  • 3 cups shredded mozzarella cheese

Instructions

  1. Preheat the oven to 350°F and spray a 9×13-inch baking pan with nonstick spray.
  2. Prepare the sauce: Melt butter in a medium saucepan over medium heat. Add garlic and sauté for 30 seconds. Whisk in milk and heavy cream; season with salt, pepper, and red pepper flakes. Stir in Parmesan cheese until smooth, then add spinach and sun-dried tomatoes.
  3. In a bowl, combine ricotta with garlic powder. Layer the lasagna: Spread about 1 cup of sauce on the bottom of the pan, add noodles, half of the ricotta mixture, followed by a third of the chicken-bacon-sauce mixture, and top with mozzarella. Repeat layers two more times.
  4. Cover with foil and bake for 40-50 minutes until bubbling. Remove foil and bake until cheese is golden brown.
  5. Allow to cool for at least 10 minutes before serving.
