Marry Me Chicken Pasta is the ultimate comfort food that combines creamy Parmesan sauce with tender chicken and sun-dried tomatoes, making it perfect for cozy dinners or special occasions.


Ingredients

  • 4 boneless, skinless chicken breasts (diced)
  • 10 oz pasta (penne, rigatoni, or fettuccine)
  • 2 tbsp oil from sun-dried tomatoes
  • 1 cup sun-dried tomatoes (diced)
  • 4 cloves garlic (minced)
  • 1¼ cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 cup chicken broth
  • Salt and pepper (to taste)
  • Fresh basil (for garnish)

Instructions

  1. Cook pasta in salted water until al dente. Reserve ½ cup of pasta water and drain.
  2. In a bowl, coat diced chicken with cornstarch, oregano, salt, and pepper.
  3. Heat oil in a large skillet over medium-high heat. Cook chicken until golden brown (5-6 minutes). Remove and set aside.
  4. In the same skillet, sauté garlic and sun-dried tomatoes for 2-3 minutes.
  5. Stir in chicken broth and heavy cream; simmer for 3-5 minutes.
  6. Gradually add Parmesan cheese until melted.
  7. Return chicken to the skillet; simmer for another 5 minutes.
  8. Combine cooked pasta with the sauce, using reserved pasta water to adjust consistency as needed.
  9. Garnish with fresh basil before serving.
