- 1 bay leaf
- 3/4 cup ditalini pasta
- 6 cups chicken stock
- 1/2 cup low-fat cream cheese
- 1/2 cup half and half (single cream)
- 2 cups rotisserie chicken (shredded)
- 1/3 cup Parmesan (grated)
- 2 cups fresh baby spinach (or kale)
- Salt and freshly ground black pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrot, and celery; cook for 5 minutes until softened.
- Stir in garlic and cook for another minute. Add sun-dried tomatoes and red chili flakes; cook for an additional minute.
- Add the bay leaf, ditalini pasta, and chicken stock; bring to a boil. Reduce heat and simmer for 10-12 minutes until pasta is almost cooked through.
- Stir in cream cheese and half-and-half; let simmer until thickened slightly.
- Add shredded chicken, Parmesan cheese, and spinach; stir well and cook for another 1-2 minutes until spinach wilts.
- Season with salt and pepper to taste.
