- 1 ¼ cup graham cracker crumbs

- 6 Tablespoons sugar
- 1 egg

- 2 Tablespoon lemon juice
- ½ light brown sugar
- 2 Tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1 ½ Tablespoons sugar
- ¼ cup unsalted butter-melted
- 1 cup all-purpose flour
- ½ cup light brown sugar (or ¼ cup light brown sugar + ¼ cup granulated sugar)
- Dash of salt
- 6 Tablespoons unsalted butter-melted
- 1 Tablespoon flour
- 1 ½ teaspoon vanilla
Instructions
- Prepare the strawberry pie filling by cooking diced strawberries with lemon juice, sugar, cornstarch, and vanilla until thickened. Let cool.
- Make the graham cracker crust by mixing crumbs with sugar and melted butter; press into muffin tins and bake for 8-10 minutes.
- Create the cheesecake filling by beating cream cheese, sugar, flour, vanilla, and egg until smooth.
- Assemble by layering cheesecake filling over cooled crusts and topping with strawberry pie filling. Bake for 20-25 minutes until set.
- Cool completely before refrigerating for at least an hour before serving.
