Ingredients

  • 12 ounces spaghetti
  • 2 boneless, skinless chicken breasts
  • 1 cup shredded Monterey Jack cheese
  • 1 medium yellow onion
  • 3 garlic cloves
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Spices: paprika, Italian seasoning, salt, and black pepper
  • Fresh parsley for garnish

Instructions

  1. Cook the spaghetti according to package instructions until al dente; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken with paprika, Italian seasoning, salt, and pepper; add to the skillet and cook until golden brown (5-7 minutes). Remove chicken from skillet.
  3. In the same skillet, melt butter and sauté chopped onion (3-4 minutes), then add minced garlic (30 seconds).
  4. Pour in chicken broth and heavy cream; simmer for about 5 minutes until slightly thickened.
  5. Return the spaghetti and chicken to the skillet; toss to combine.
  6. Sprinkle cheese on top, cover, and let sit for 2-3 minutes until melted.
  7. Garnish with fresh parsley and serve warm.
