Moo Shu Chicken is a vibrant and flavorful stir-fry dish that combines tender chicken with fresh vegetables, all enveloped in a savory Hoisin sauce.   • ⅔ cup Hoisin Sauce
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 2 cloves minced garlic
  • 1 tablespoon grated ginger
  • 2 teaspoons cornstarch
  • 1 teaspoon sesame oil
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons mirin
  • lbs boneless skinless chicken breasts, cut into strips
  • 3 tablespoons vegetable oil
  • 2 large eggs
  • 1½ cups sliced shitake mushrooms
  • 4 cups sliced cabbage
  • 3 green onions, thinly sliced

Instructions

  1. In a mixing bowl, whisk together Hoisin sauce, soy sauce, rice vinegar, garlic, ginger, cornstarch, sesame oil, black pepper, and mirin. Reserve ½ cup of the marinade.
  2. Marinate chicken in the remaining mixture for 10–15 minutes.
  3. Heat vegetable oil in a non-stick skillet over medium-high heat. Cook marinated chicken until browned (about 2–3 minutes). Remove and set aside.
  4. In the same skillet, sauté mushrooms until browned (3–4 minutes) and add back to the chicken.
  5. Scramble eggs in the skillet until fully cooked; remove and slice into strips.
  6. Stir-fry cabbage until wilted (3–4 minutes). Return chicken, mushrooms, and egg to the skillet.
  7. Add reserved marinade; stir to combine and cook until thickened.
  8. Serve hot, garnished with sliced green onions.
