  • 3/4 cup granulated sugar
  • 2 1/4 cups all-purpose flour
  • 1 1/2 tsp cinnamon
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsweetened coconut (shredded)
  • 1/2 cup walnuts (chopped)
  • 1 cup grated zucchini
  • 2 cups grated carrots
  • 1/2 cup unsweetened applesauce
  • 1/2 cup maple syrup
  • 3 large eggs
  • 1/2 cup avocado oil
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the sugar, flour, cinnamon, baking soda, salt, coconut, and walnuts.
  3. Stir in the grated zucchini and carrots until evenly distributed.
  4. In another bowl, combine the applesauce, maple syrup, eggs, avocado oil, and vanilla extract. Mix well.
  5. Create a well in the dry ingredients and pour in the wet mixture. Gently fold until just combined.
  6. Fill muffin tins with batter and bake for 25–35 minutes or until a toothpick comes out clean.
  7. Let cool for seven minutes before transferring muffins to a wire rack.
