Ingredients
- 6 chicken thighs (bone-in)
- Juice of 1/2 lemon
- 1/4 cup chicken stock
- 2 cups basmati rice
- 3 1/2 cups chicken stock
- 1 onion (finely chopped)
- 10 garlic cloves (crushed)
- Spices: turmeric, cumin, coriander, oregano
Instructions
- Marinate chicken thighs in lemon juice, spices, garlic, salt, and pepper for at least an hour.
- Preheat oven to 350°F (175°C).
- Sear marinated chicken in an ovenproof skillet for about 10 minutes until browned on both sides.
- Prepare the rice base by cooking onions and garlic in olive oil, then adding turmeric and coriander before mixing in the rice and stock.
- Place seared chicken on top of the rice mixture, cover tightly, and bake for 20 minutes.
