  • 32 oz frozen hash browns
  • 1 lb precooked ham or bacon
  • 1/2 onion, chopped
  • 1 green pepper, chopped (optional)
  • 1.5 cups grated medium cheddar cheese
  • 12 eggs
  • 3/4 cup whole milk
  • Salt and pepper to taste

Instructions

  1. Grease the inside of a 4-quart slow cooker to prevent sticking.
  2. Layer 1/3 of the hash browns at the bottom.
  3. Add 1/3 of the ham or bacon and onions; season with salt and pepper.
  4. Sprinkle 1/3 of the cheddar cheese on top.
  5. Repeat layers two more times.
  6. In a mixing bowl, whisk together eggs and milk until smooth.
  7. Pour the egg mixture evenly over the layered ingredients in the slow cooker.
  8. Cover and cook on low for 6-8 hours until eggs are set.
