Ingredients
- 32 oz frozen hash browns
- 1 lb precooked ham or bacon
- 1/2 onion, chopped
- 1 green pepper, chopped (optional)
- 1.5 cups grated medium cheddar cheese
- 12 eggs
- 3/4 cup whole milk
- Salt and pepper to taste
Instructions
- Grease the inside of a 4-quart slow cooker to prevent sticking.
- Layer 1/3 of the hash browns at the bottom.
- Add 1/3 of the ham or bacon and onions; season with salt and pepper.
- Sprinkle 1/3 of the cheddar cheese on top.
- Repeat layers two more times.
- In a mixing bowl, whisk together eggs and milk until smooth.
- Pour the egg mixture evenly over the layered ingredients in the slow cooker.
- Cover and cook on low for 6-8 hours until eggs are set.
