Ingredients
- 2 pounds pot roast
- 32 oz beef broth
- 2 russet potatoes, chopped
- 4 large carrots, chopped
- 1 bag frozen peas
- 1 bag frozen green beans
- 1 bag frozen corn
- 2 cans (10.75 oz each) tomato soup
- Salt and pepper
Instructions
- Season pot roast with salt and pepper and place it in a slow cooker with half the beef broth.
- Cook on LOW for about 10 hours until tender, then shred the meat.
- In a large pot, heat oil over medium heat.
- Sauté chopped carrots and the frozen seasoning mix until tender.
- Add shredded beef, potatoes, remaining vegetables, broth, tomato soup, water, salt, and pepper to the pot. Stir well.
- Bring to a boil over high heat; reduce to simmer and cover for about an hour.
