  • 2 pounds pot roast
  • 32 oz beef broth
  • 2 russet potatoes, chopped
  • 4 large carrots, chopped
  • 1 bag frozen peas
  • 1 bag frozen green beans
  • 1 bag frozen corn
  • 2 cans (10.75 oz each) tomato soup
  • Salt and pepper

Instructions

  1. Season pot roast with salt and pepper and place it in a slow cooker with half the beef broth.
  2. Cook on LOW for about 10 hours until tender, then shred the meat.
  3. In a large pot, heat oil over medium heat.
  4. Sauté chopped carrots and the frozen seasoning mix until tender.
  5. Add shredded beef, potatoes, remaining vegetables, broth, tomato soup, water, salt, and pepper to the pot. Stir well.
  6. Bring to a boil over high heat; reduce to simmer and cover for about an hour.
  7. Adjust consistency by adding water as needed before serving.
