- 2 Tbsp powdered sugar
- 1/3 cup pumpkin puree
- 2 cups graham cracker crumbs
- 1/2 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 2 cups white chocolate chips
- 1–2 tsp coconut oil (optional)
Instructions
- In a mixing bowl, beat the softened cream cheese and powdered sugar until light and creamy.
- Mix in the pumpkin puree, one cup of graham cracker crumbs, pumpkin pie spice, and cinnamon until well blended.
- Add the second cup of graham cracker crumbs and mix again.
- Chill the dough for at least 30 minutes.
- Roll chilled dough into balls and place on a lined baking sheet; refrigerate again for another 30 minutes.
- Melt white chocolate chips in a microwave-safe bowl, stirring frequently until smooth.
- Dip each pumpkin ball into melted chocolate, tapping off excess before returning to parchment paper.
- Drizzle any remaining chocolate over the tops and add sprinkles or additional graham crumbs if desired.
