  • 1 cup unsalted butter (room temperature)
  • 1 cup Domino® Granulated Sugar
  • 1 cup Domino® Light Brown Sugar (packed)
  • 1 tbsp vanilla extract
  • 3 large eggs (room temperature)
  • 1/4 cup full-fat sour cream (room temperature)
  • 2 1/2 cups unsalted butter (room temperature)
  • 4 cups powdered sugar
  • 2 tbsp heavy cream
  • 2 tsp vanilla extract
  • 1 tsp vanilla bean paste
  • 1 cup white chocolate chips
  • 1/4 cup + 3 tbsp heavy cream
  • white food coloring (optional)
  • oatmeal cream pie cookies (for decorating)

Instructions

  1. Preheat oven to 350°F (180°C) and line three 8-inch cake pans with parchment paper.
  2. Boil water and stir in oats; let cool.
  3. Whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  4. Beat butter and sugars until fluffy; mix in eggs and sour cream.
  5. Combine cooled oats with the batter; fold in dry ingredients.
  6. Divide batter among pans and bake for 20–22 minutes until toothpick comes out clean.
  7. Prepare buttercream by beating butter and gradually adding powdered sugar; mix in heavy cream and vanilla.
  8. Assemble layers with frosting between them; frost top and sides of the cake.
  9. Make glaze by heating heavy cream and mixing with white chocolate chips; pour over the frosted cake.
