Ingredients
- 2 lb boneless, skinless chicken breasts
- 1/3 cup balsamic vinegar
- 2 Tbsp honey
- 8 oz grape tomatoes
- 8 oz fresh mozzarella balls
- 2 garlic cloves
- 2 Tbsp oil (avocado or olive)
- Fresh basil
- Kosher salt
- Black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, whisk together balsamic vinegar, honey, oil, minced garlic, Italian seasoning, salt, and pepper.
- Toss halved grape tomatoes and mozzarella with chopped basil; season with salt and pepper.
- Heat oil in an oven-safe skillet over medium-high heat. Season chicken with salt and pepper; sear until golden brown on both sides.
- Pour balsamic sauce over the chicken and add the tomato-mozzarella mixture.
- Bake uncovered for 18–23 minutes until chicken reaches an internal temperature of 165°F (74°C). Let rest for 5 minutes before serving.
