Ingredients
- 6 skinless chicken thighs
- 1½ cups uncooked basmati rice
- 3 cups low sodium chicken stock
- 1 cup chopped onion
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1½ tsp mixed herbs
- 2 tsp smoked paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- In a small bowl, mix smoked paprika, mixed herbs, garlic powder, onion powder, salt, and pepper. Set aside.
- Rinse basmati rice under cold water until clear; set aside.
- Season chicken thighs with the spice mixture.
- Heat olive oil in a large skillet over medium-high heat; sear chicken for 3 minutes on each side until golden brown.
- Remove chicken and sauté onions in the same skillet until soft.
- Add butter and rinsed rice; toast for 1–2 minutes.
- Pour in chicken stock and stir in the remaining seasoning mixture.
- Place seared chicken on top; cover and cook on low-medium heat for 15–20 minutes until rice is tender.
