- 16 ounces firm or extra-firm tofu
- ¾ cup orange juice
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 1 medium red bell pepper
- 3 tablespoons chopped spring onions
- Olive oil
- Ginger
- Garlic
- Sugar
- Vinegar (rice or apple cider)
- Water
Instructions
- Drain and press tofu to remove excess moisture; cut into bite-sized cubes.
- Toss tofu cubes in a mixture of soy sauce, olive oil, and cornstarch until well-coated.
- In a non-stick skillet over medium-high heat, cook the tofu until golden brown on all sides (about 8–10 minutes). Set aside.
- Stir-fry sliced bell pepper for 2–3 minutes in the same skillet.
- Combine orange juice, zest, ginger, garlic, sugar, soy sauce, vinegar, cornstarch, and water; pour into skillet with bell peppers and simmer until thickened.
- Return cooked tofu to the skillet; toss gently in the sauce for an additional 2–3 minutes.
- Serve over rice and garnish with spring onion tops.
